Legend has it that brownies were first made in 1893 at the Palmer House Hotel in Chicago. Bertha Palmer, the wife of the hotel owner, asked their pastry chef to prepare a dessert suitable for ladies attending the Chicago World’s Columbian Exposition. 

She requested the chef for a cake-like delicacy small enough to fit in lunch boxes. The result made history, the Palmer House Brownie with walnuts and an apricot glaze was a huge crowd puller. These brownies remain on the hotel menu even today.

Another story says the dessert was created by accident when a housewife in Bangor, Maine, forgot to add baking powder to the cake. When the cake didn’t rise, she decided to serve the flat cake anyway.
